Apple Fritters

2 cups Almond Flour, Blue Diamond® or Nature’s Eats®

1 tbsp. baking powder

1 tsp. ground nutmeg

¼ tsp. salt

2 lg. eggs

4 tbsps. vegetable oil

1 medium apple, peeled, cored, and chopped

1 tsp. ground cinnamon

2 tsps. Swerve® brown sugar

¼ tsp. ground gloves

2 oz. of cream cheese

2 tbsps. Swerve® confectioner’s sugar

1 tsp. vanilla extract

2 tbsps. unsweetened Almond milk

 

In a medium mixing bowl combine, almond flour, baking soda, nutmeg, and salt, mix well. Add eggs and vegetable oil mix well to form dough. In a separate bowl combine apple, cinnamon, cloves, and brown sugar stirring to coat apples, add to dough mixing until incorporated. Heat oil to 375’, using a 2-1/2 inch ice cream scoop add to hot oil cooking 3-5 minutes, remove, and let drain on wire rack.

 

Icing:

Combine confectioner’s sugar, vanilla, cream cheese, milk, mix with hand mixer, dip each fritter into icing, place back on wire rack while fritters continue to cool and icing finishes dripping.

 

Makes 8 apple fritters, 1 serving is 1 fritter, each serving 13 carbs.
