Biscuits & Gravy

Biscuits:

 2 cups Almond Flour Nature’s Eats® or Blue Diamond®

¼ cup chopped cold butter

¼ cup equivalent artificial sweetener Aspartame

2 ½ tsp. rapid rise yeast

1 tbsp of baking powder

1/3 cup warm water or unsweetened Almond milk (+ 1 tbsp. as needed)

1/8 tsp pink Himalayan salt

 

Mix and knead together, divide into 8 balls, shape each ball into round ½ in.to 1 in. thick biscuits, let rise 30 minutes, bake @ 400 for 10-12 minutes. Makes 8 biscuits each serving size is 5 carbs.

 

Gravy:

 1 lb bulk sausage

4 cups unsweetened Almond milk

Salt and Pepper

2 tsps. Xanthan Gum

4 tbsps. additional sausage drippings or vegetable oil

 

In a large skillet over medium heat cook bulk sausage until no longer pink, add additional oil, heat until hot. Then add milk, heat until warm, while stirring constantly gradually add 2 tsps. of Xanthan Gum, continue stirring until gravy thickens. 1 cup is one serving, 1 serving is 1.8 carbs per serving.

 

2 biscuits with 1 cup of gravy is 11.8 carbs.
