Turkey Gumbo

½ onion chopped

2 tbsps. diced garlic

2 tbsps. butter

2 tbsps. red pepper relish

2 lbs. cooked chopped Turkey

1 lb. cooked Bratwurst sausage, sliced

1 tsp. salt

2 tsps. black pepper

1 tsp. crushed red pepper

1-14 oz. Hunt’s® diced tomatoes

2 cups sliced frozen okra

2 cups chopped cabbage

1-12 oz. pkg. of Palmini ® Angel Hair Spaghetti, chopped

2 Bay Leaves

2 tbsps. of crushed basil

1-8 oz. can sliced mushrooms

6 cups of Turkey broth

 

 

In 8 qt stock pot, melt butter, add onion, garlic, red pepper relish, and sauté. Add remaining ingredients, cook on medium heat 2 hours, reduce to simmer for additional 2 hours. Makes 13 – 1 cup servings, each serving is 5.5 carbs.
