Coconut Macaroons
2 egg whites
½ tsp. cream of tater
2 tsps. Swerve® granulated sugar
½ cup Pecans, crushed
1/8 vanilla extract
1/8 tsp. coconut extract
½ cup coconut, shredded
¼ cup sugar-free chocolate chips
In a mixing bowl beat egg whites, cream of tater, sugar, vanilla extract, and coconut extract until stiff peak forms. Gently mix in pecans, coconut, and chocolate chips. With a 1-1/2 cookie scoop add to parchment lined cookie sheet. Bake at 300’ for 20 minutes. Makes 18 macaroons 1 macaroon is 3.3 carbs.
